Finding food preparation regulations

While it’s required to make any food in a commercial kitchen in California,

At one time I wanted to convert an old restaurant into a commercial kitchen. No matter what I searched I could not find the guidelines for Alameda County (where Oakland and Berkeley are located).

Aha upon finding the Food Safety section of the county’s website, I discovered the California Retail Food Code which covers all of the ventilation and building requirements in addition to the details of food safety while preparing and storing food.

Food Safety class

“California law requires that at least one person responsible for food safety at each food facility be food safety certified by passing an approved examination.” It’s required to get re-certified every 5 years as well. Examples¬† of what this class will cover.
